One Day Bar and Yaki are Waco’s newest spaces for food, coffee and adult beverages all in one beautiful location in downtown Waco. Despite opening in the midst of a pandemic, the owners are thrilled to be welcomed by a stream of faithful customers. “Bringing this dream we’ve had for a long time to fruition and the reception in Waco have all been a real blessing,” said Jake Patterson, owner of Yaki. Located on Columbus Avenue, the space is meant to be consumed all day, said One Day owner Kyler Griffith. “Whether it be coffee during the day or a cocktail at night, One Day’s menu is made to educate and inspire its consumers,” Kyler said. Behind the bar is Yaki, a food truck serving dishes influenced by Jake’s time in Portland, Oregon which he calls “Texas Teriyaki.” Each take-out box contains a layered meal of sushi rice, coleslaw, and your choice of oak-smoked chicken, roasted veggies, or smoked salmon. All boxes are gluten free and the veggie box is great for vegans. Kyler and Jake met and became close friends through their time at Common Grounds Waco. Both credit the experiences and relationships formed there with getting them to where they are today. One Day is the brainchild of Kyler whose answer to questions about when he would open his own place was always, “One day.” The partners hope their businesses bring something new to Waco, and they share a common goal of providing something for everyone. “The goal with Yaki is to serve a meal in a box that suits every palette, and is an inexpensive and healthy alternative to satisfy even the hungriest customers,” Jake said. And that parallels with One Day, where you can find classics on the menu like an old-fashioned or margarita, unique hand-crafted cocktails or just a beer in a can. Stop by and make everyone happy with a truly one-stop destination for caffeine, food and alcohol.
