Chef Len uses only the finest ingredients to create delicious dishes including a wilted Mesclun green salad with vibrant flavors of pancetta and cherries, his signature cream of brie and tart apple soup, fresh sashimi-grade ahi tuna and moist and buttery Chilean sea bass. The Green Room’s Carpaccio is based on the original recipe from the renowned Harry’s Bar in Venice, and its stuffed tenderloin is 100% certified Angus beef from Yoakum, Texas.
