Such success is not unusual for the Castillo family, who has served fresh Mexican cuisine to Wacoans for more than 80 years. “We haven’t strayed from our family tradition of consistency—that’s the key,” said owner Sam Castillo, Jr. He adds, “You can still enjoy the same enchilada dinner you enjoyed 40 years ago.” In the 1920s, Castillo’s grandfather sold Mexican food on the downtown Square, then started Tony’s Aztec Café in 1935. His son, Sam Castillo, Sr., opened the original La Fiesta in 1963. Now, owners Wanda Patlis, Vicki Castillo, and Sam Castillo, Jr. continue the Castillo family tradition of great Tex-Mex at Waco’s award-winning La Fiesta Restaurants.
